I am currently viewing excel via the "Page Break Preview" mode. Is there any way to STAY in Page Break Preview, but remove the "Page 1", etc. watermarks that are present?

Unfortunately, there is not a way to do that.
You'll also note that in Page Break Preview mode, shaded cells do not appear shaded as well.
We don't generally recommend working in that view mode.
